A single plot in a place called “Le Village” 91 acres.
Description
Vinification : Fermentation and aging in oak barrels (from our family Ecueil woods) for 19 months.
Aging : 11 ans sur lies après tirage
This racking under cork is a setting of foam made after bottling with a cork stopper. This old technique was replaced in the 1950s by the use of a bidule (receptacle for depositing) and a capsule (to guarantee watertightness). After several years of testing, we found that this method brings advantages to aging in the cellar, beyond 4 years: prolonging the micro-oxidation of wines initiated in oak barrels, integrating effervescence more harmoniously and finally ensuring better conservation over time.
Limited production: 1440 bottles.
Viticulture : Culture environnementale depuis 21 ans + approche en biodynamie + labour à cheval depuis 2008.
This cuvée is the symbol of the transmission of the Earth through the centuries and the generations of the family since it comes from a plot belonging to the family for centuries.
As in the time of the ancestors, it has been worked with horses again since 2008 and cultivated in accordance with organic farming.
